Finocchiona is a traditional Italian charcuterie from the Tuscany region of Italy. It is renowned for its distinctive flavour, which comes from the generous addition of fennel seeds, known as 'finocchio' in Italian, hence the name.
To prepare Finocchiona, high-quality pork is coarsely minced and seasoned with salt, black pepper, garlic and, of course, fennel seeds. This combination of ingredients gives the sausage its characteristic aroma and subtle fennel flavour.
Once seasoned, the meat is stuffed into a natural casing and left to dry and age for several weeks or even months, in the traditional way. During this process, the flavours develop and intensify, creating a charcuterie rich in flavour and aroma.

Finocchiona is often sliced thinly and served as an antipasti, accompanied by cheeses, fresh bread and olives. It can also be used as an ingredient in sandwiches, pizzas, pinsas, salads or pasta dishes to add a touch of authentic Tuscan flavour.
