Lardo di Colonnata is a very special Italian sausage, originating in the region of Tuscany, in particular the village of Colonnata. Unlike other types of bacon, Lardo di Colonnata is aged in marble pots with salt, garlic, pepper and aromatic herbs for several months. This process gives it a melting texture and a uniquely rich, delicate flavour. It is often sliced thinly and served on toast or used to enrich pasta dishes, pizzas or stews.
