Description
Production of this bowl-shaped pecorino is limited to the availability of milk from the supply stables located in the Val D'Orcia region. It is characterised by a short maturing period, a soft texture and a mild flavour balanced by a slight acidic note typical of sheep's milk. The surface of the rind is treated with tomato concentrate.
Composition
Pasteurised sheep's milk, Volterra salt, rennet and milk enzymes. Surface treated with tomato concentrate and preservatives E235, E202.
